What's the difference between malt powder, malted milk powder, barley malt powder, and barley malt syrup?

Malt is made from grains - most often barley. The grain is steeped in water, allowed to germinate, then kiln-dried, after which it is boiled and processed into a syrup or dry powder. It is generally used as a more healthy alternative sweetener, being about half as sweet as normal sugar (sucrose). So to answer your question malt powder and barley malt powder is the same stuff - dried barley malt. Barley malt syrup is the 'wet' version of the same stuff. Malted milk powder is a powdered milk to which powdered barley malt has been added - you'll probably know it as Ovaltine or Horlicks, which was invented as an artificial infant food by James and William Horlick in 1873.


Malt syrup is delicious and nutritious. We always have a jar of it at home and enjoy it on cereals, pancakes etc. Make your own Horlicks - warm up a pan of milk and stir in some malt. Pour it over ice-cream or make malted milkshakes. It's a great vitamin supplement too - just eat it right off the spoon. Feed great quantities of it to convalescents or those undergoing medical procedures like chemotherapy, it's easily digested and very nutritious. My son thrived on malted warm milk in addition to breastfeeding, and at 4 years old he still loves it at bedtime - in addition to eating it off the spoon whenever he gets close enough to the jar!


Use it in your cooking and baking as a substitute for sugar - as a general rule if your recipe requires 1 cup sugar, replace with 1 and 1/3 cups malt syrup and reduce the liquid (milk or water) by 1/4 cup. Add a little more baking powder or baking soda to make it lighter.


Malt is expensive at the pharmacy - rather get a tin of UN-HOPPED brewer's malt (light, medium or amber) from your local brew-shop or supermarket.
